Salsa-Inspired Keto Hamburger Casserole

Beefy, bacon-filled, & cheesy- what more could a guy want? My picky-eater husband liked it and yours will too.


Cheese is high in cholesterol so, while I don't suggest eating cheese & bacon-filled food often, occasionally it is good to change things up a bit.


The best thing is, this is perfectly keto and gluten-free.


My husband hates casseroles.


I've rarely found one he likes the idea of trying.


Maybe he had some sort of childhood trauma caused by a casserole or something, I don't know.


But for him to say this is "pretty good," is a big deal. This will be one of our favs from here on out!


I will not make you scroll and scroll to get to the recipe. I hate that. Don't you?


The main ingredients in this recipe are beef, cheese, and green beans.



Salsa-Inspired Hamburger Casserole


Ingredients:

(Feeds three-four people)

  • 1 lb organic grass-fed 85% ground beef

  • 1 can Ro-Tel Tomatoes & Green Chilies, Mild, Diced (or dice your own from fresh)

  • 1/8 cup unsalted butter, room temperature

  • Garlic powder (about 1/2 tsp or to taste)

  • Dash Original or Onion Powder (1/4 tsp or to taste)

  • Tomato bisque

  • Salt & Pepper to taste

  • 1 large Can Allen's green beans

  • 1 tbs Dijon mustard

  • 1 tsp olive oil

  • 1/2 C shredded cheddar cheese

  • 4 slices of bacon

Directions:


  1. Heat oven to 360 degrees

  2. Fry ground beef in a medium size frying pan

  3. Add salt & pepper to ground beef

  4. Place bacon on a cookie sheet and broil in oven on second rack (flipping when brown to ensure both sides are browned), remove from oven when crispy. Once browned cut strips into bacon pieces once the meat is cooled enough.

  5. In a medium-sized casserole dish, add all of the other ingredients and mix well.

  6. Add ground beef and stir.

  7. Sprinkle with cheddar cheese and then the bacon.
